Fraiche Culver City’s Pre-Prohibition Nights: $1 Bites, $5 Cocktails

Ever since Albert Trummer left Fraiche Culver City back in 2008 to go and open up his own bar, Apotheke in New York City, Fraiche’s cocktail program has never been the same. But now there’s a new bartender behind the stick: Kiowa Bryan, formerly of the Soho House where she trained under The Varnish’s Chris Ojeda. She’s looking to put the restaurant’s bar program on the map.

I’d say she’s starting on the right foot by introducing a new bar night for boozers on a budget: Pre-Prohibition Nights, with select half-price classic cocktails and 1920s-priced bar bites.

$1 bites include: oysters, shrimp, anrancini, soup shooter, tuna tartare, cheese Panini and buratta crostini

$5 cocktails include: Aviation, Daquiri, Clover Club, Sidecar, Old Fashioned, French 75 (gin or cognac), El Presidente, Sazerac, Manhattan (!), Bijou. And 50 cents for the Fish House Punch.

It kicks off tonight at 9pm and runs til 1am (or 11:30pm, depending on the turnout). The flyer she sent me said, “Dress to impress” but Kiowa said, “Dressing up not necessary, but encouraged.” Regardless Fraiche won’t let you come in wearing flipflops anyway.

I’m just happy that they have $5 Sazeracs and Manhattans. Wonder how crazy that tiny bar area in the restaurant will get.

You’ve probably heard of Alie & Georgia before. They’re the Los Angeles cocktail vloggers, Alie Ward (LA Times staff writer) and Georgia Hardstark (journalist/blogger), who in 2009 created the McNuggetini and a how-to video to go with it. Now, personally I thought this cocktail, which involves a chocolate milkshake and barbecue sauce, sounded erptastic but their video won me over. How cute are they? What with the banter and purty sundresses.  It’s like hanging out with your too-cute friends as they experiment in the kitchen. So when I heard that they were going to be doing a demo at the Los Angeles Times Celebration of Food and Wine this past Sunday, I had to check them out.

Under the oppressive sun on the Paramount Studios lot, I watched them mix three of their unusual creations: Umami Up, Peanut Butter & Jealous and the Chocolate Cherry Bomb. The Umami cocktail was described as something best enjoyed as an aperitif and definitely something you wouldn’t drink on a first date due to its pungent odor. Alie even had a box of Altoids on hand to offer a curiously strong chaser to those daring enough to sample the garlic-infused concoction.

The Peanut Butter & Jealous was a mix of vodka and cranberry juice muddled with raspberries and served in a peanut butter-rimmed glass. Sounded fun and it looked like the perfect drink for stylish moms on a play date; they can sip on this and make their rug rats jealous. (Here’s the video of the recipe via Food2.com.)

The only cocktail I had the chance to grab at in the mad rush to the stage at the end of the demo was the Chocolate Cherry Bomb, a fiery but sweet drink composed of chocolate, spicy vodka, Sriracha sauce and a garnish of chili pepper and pepper-infused cherry. OK, now to be honest, this smelled like garbage left out in the hot sun for three days but once I got past the smell it tasted all right. Spicy, sweet. The only thing was that I couldn’t get past the smell on the third sip.

But I have to give those girls an A for effort, creativity and style. Heaven knows, it’s a nice change of pace from the vests-and-bowtie mixology in cocktail-serious bars around town. Not that I’m hating on those, because you know I love them. But as the girls said at their demo to stay-at-home bartenders, “Never get intimidated by mixology. It’s fun and risky. Don’t go too high brow, have fun.” It’s nice to be reminded about that. Hmm, now how would one go about making a mac and cheese cocktail?

And even their suggestions for where to get your booze and mixers are down-to-earth: Rite Aid apparently “has the craziest deals” and Galco’s Soda Shop is awesome for its wide selection of vintage sodas.

That same night the girls will be guest bartending at Cha Cha Lounge (where they first met, aww) in Silver Lake from 7 to 9pm. This will be a weekly gig to coincide with the release of each of their videos. So see it on the Web first and then head over to Cha Cha to taste it IRL.

Last night I celebrated my birthday with a few of my buddies at Roger Room in West Hollywood with my fave mixologist, Damian Windsor. While there he gave us sneaky sips of the new cocktails that will debut tomorrow on the updated “Also” cocktail menu, a supplement to the regular 21-drink menu. Roger Room prints a new “Also” menu with five drinks about every three months for the new season to showcase “the new things they’re into” as well as seasonal fruit.

Here are the new drinks for your consideration. Damian created all of them except the Star Strega Swizzle which came from Jason Bran:

  • Algonquin ($13): Pikesville Rye, pineapple juice, pineapple syrup, Dry Vermouth, served up
  • Let’s Get Lost ($14): Tres Reyes Blanco Tequila, lime juice, agave nectar, cucumber, mint, on the rocks
  • Pisco Punch ($14): Gran Sierpe Pisco, Mata Hari Absinthe, lime juice, pineapple syrup, pineapple juice, crushed grapes, served over crushed ice
  • Star Strega Swizzle ($14): Starr Rum, Liquore Strega, Velvet Falernum, passion fruit, lemon juice, cracked clove, served over crushed ice
  • Stranger Than Paradise ($14): Plymouth Gin, lemon juice, egg white, absinthe mist, crushed strawberry, served up

I’ve only had the Algonquin and a few sips of the Stranger Than Paradise. The Algonquin, a classic cocktail created at the Algonquin Hotel in New York back during the Vicious Circle days, is surprisingly not sweet despite the use of both pineapple juice and pineapple syrup. (The syrup is the only difference from the original recipe.) The rye and the Dry Vermouth smooth out the sweetness nicely making this a very delightful, drinkable concoction for a warm evening.

The Stranger Than Paradise was a popular drink among my friends who ordered it, loving it for its combination of the summery strawberries with that hint of absinthe and mmm, Plymouth Gin. So very light and yet potent.

And since we were on a gin kick, we went back to the regular menu. Now usually I stick to my fave cocktail, Thug, which is a spicy whiskey drink, and really haven’t explored the other cocktails made with other spirits even though there is a nice spread. So I was delighted to find a new fave on the menu: Cad, which is made with gin, coffee liqueur and lemon juice. Frickin’ awesome. Like no other coffee cocktail I’ve had before where the coffee flavor is usually overpowering and the sweetness is darn near syrupy. The gin and lemon juice softened the sweet coffee flavor here. Problem is that it’s too drinkable, as I put it away right quick. Before I knew it, aww, all gone. I believe this was the big hit of the evening as we each ordered one.

BreadBar’s Hatchi Mix featuring Rivera’s Julian Cox
Julian Cox, magician mixologist, is featured at this month’s edition of BreadBar’s Hatchi Mix tonight. Guests will ooh and aah as he serves up his eight tequila-inspired cocktails ($8 each) in three acts a la three courses of a meal — a beet cocktail with goat cheese foam as an appetizer, a Jamon Iberico Old-Fashioned as an entree and Cherries Jubilee for dessert, to name just a few. There will also be a Pizza Mixo menu of crisp pizzas as well as the full bistro menu for nosh.

Rio Brazil’s 2nd Anniversary
Celebrate the 2nd year of this Palms restaurant which will be serving up free appetizers and Salgados. Camarena Tequila will be providing the tequila shots and Caipitequilas. And if you’re still hungry you can get feijoada, moqueca, trip tip, and bobo de camarao bowls for $7 each. Stick around til 8pm for the Samba dancers.

Al Forno Fridays Poolside Pizza at the Viceroy Santa Monica
Hmm, pizza by the pool just sounds weird to me but Viceroy Santa Monica somehow is making it work with the launch of its Al Forno Fridays where you can enjoy a gourmet “poolsize” pizza from Whist executive chef, Tony DiSalvo. Pizzas ($10-$17) include oven roasted tomatoes, burrata, basil and sausage, salami, prosciutto, pancetta, tomato, mozzarella. There will also be a selection of beers from Unibroue and Stone Brewing Company as well as wines by the glass.

DeKuyper Be Gone: A New Cocktail Program at Nick & Stef’s Steakhouse

I’ve got two bits of good news for you cocktail fans: 1) The very adorable Joseph Brooke, the director of beverages for the Edison, has joined molto bello Vincenzo Marianella of Copa d’Oro in his cocktail consultation business, MyMixology, making them possibly the sexiest cocktailing duo in L.A. And 2) Joe and Vincenzo have revamped the cocktail program at downtown’s Nick & Stef’s Steakhouse!

That’s right. This wine-intensive Patina Group restaurant didn’t really give too much thought to its cocktail list before, equipping it with date-friendly girly drinks like the Banana Popsicle (egad!) and other Dekuyper-heavy cocktails to keep the arm candy of businessmen happy. So Vincenzo created a much-needed cocktail list of classic drinks and fresh ingredients and Joseph has helped put it in place at the downtown bar/restaurant as well as corrected some of Vincenzo’s English on the list.

The two didn’t simply give the bartenders there a list of color-by-number recipes and leave them to their own devices. “We’re teaching them the format, the method of creating their own cocktails,” Joe said. “We’re sort of screwing ourselves out of more business but ultimately we want the bartenders to start taking ownership of the program so they start maybe making their own cocktails and it’s good enough so maybe in the next menu they’ll put in one of their own. And that’s our goal with this place.”

The duo also did an extreme makeover of the bar’s shelves getting rid of the sticky, dusty bottles of Dekuyper, upgrading the well booze and introducing quality mixers like Aperol and Brizard. “That whole third row up there was all Dekuyper and probably has never been touched for god knows how long,” Joe lets on. “So we were more focused on changing up the liqueur because that provides much more flexibility when making a cocktail.”

The brand-new cocktail menu, which is comprised of about 14 drinks ranging in price from $11 classic cocktails to the $16 Smoke of Scotland (a Vincenzo signature cocktail),  has already been in effect for about three weeks and has attracted more clientele and intrepid drinkers as well as offered the regular customers ways to develop their palates. Numbers are up and the outdoor patio has been a-buzzing with 9-to-5ers eager to soak up the summer sun while enjoying some tasty, refreshing drinks.

For now the menu is only for the bar area but eventually the guys hope that the servers will get involved in the new program where they can recommend cocktails for dinner. “It would be tricky because obviously you would make more money selling wine but it’s just so much more an in-depth experience to start off with cocktails,” Joe said.

MyMixology is also hoping to eventually offer a different take on the Bartender’s Choice at Nick & Stef’s where patrons can choose between the Nick’s Choice, an aromatic cocktail, and Stef’s Choice, a sour.

Unfortunately the bar/restaurant doesn’t have late hours, not really conducive to bar hopping, and is subject to the downtown flow of things but if you swing by before 8pm you’ll make it before the place turns into a ghost town.

But just in time for the warmer days of summer, the restaurant will be doing BBQ on the patio every Thursday night starting tomorrow July 1. They’ll be serving up burgers and bites right off the grill from 4:30 to 9pm. Work that in with the weekday happy hour from 3pm to close where you can get MyMixology’s delicious classic cocktails like the Kentucky Buck with Old Crow Bourbon, ginger and lemon juice and Tommy’s Margarita for $5 and you’ve got yourself a fun weekday party.

Breadbar’s New Hatchi Mix Mixology Series Starts May 6

If you’re a fan of cocktails, you’re probably no stranger to paying over $12 for a decent cocktail at a respected bar. I know, I know, but that’s the price one pays for quality. Fortunately, starting on Thursday, May 6, Breadbar Century City’s brand-new monthly mixology series, Hatchi Mix, kicks off featuring some of the best L.A. mixologists –with cocktail techniques ranging from medicinal to molecular. Best part is that each drink on this one-night-only eight-cocktail menu is $8.

You could say the event is sort of like a cross between the Edison’s Radio Room and the pop-up Ludo Bites, in that the guest mixologists from other venues are featured and sometimes they bring guest chefs to prepare small plates to complement their cocktails.

The first mixologist up is Devon Espinosa of the Tasting Kitchen in Venice. He also happens to be the one who will book future guests for the series. But on his night, pre-Prohibition cocktails are featured, great drinks which illustrate the origins of American cocktail history: the Sazerac, thought to be the first cocktail invented in America; the Martinez, developed by legendary bartender Jerry Thomas in the 1800s; the Manhattan, the precursor to the Martini; and the Last Word, a Prohibition drink that was lost but has since gained newfound popularity. Mmm, all great cocktails, and again, $8 each.

If you miss this one, not to worry as the upcoming featured bartenders are equally awesome. Look for Joel Black who will be focusing on rum on June 3 and Rivera’s Julian Cox and his tequila cocktails on July 1.
