Absolut Sensory Experience: 9 Courses With Alinea’s Grant Achatz

Alinea's Steelhead Roe, coconut, licorice, pineapple by Caroline on Crack

Alinea's Steelhead Roe, coconut, licorice, pineapple

One friend asked if I could sneak him in my handbag and another begged me to pretty please wrap up an entree to go for her. These reactions told me that I was so very lucky to take part in the eight-hour Absolut Sensory Experience seminar and dinner last Friday. What was the big deal about this event whose soul purpose was basically to reopen our eyes to the wonderful world of vodka?

It wasn’t so much that cocktail author David Wondrich (Imbibe! and Punch) was there to mix up some cocktails in a pop-up vodka speakeasy or that the guest list was a who’s who in the L.A. cocktail scene from bartenders to bar owners to brand ambassadors to media. Frankly, it was because Grant Achatz (pronounced “A-kitz” as in “packets”), genius chef and 2008 James Beard winner behind Chicago’s Alinea Restaurant, which just received the coveted 3 stars in the new Michelin Guide on Tuesday, was there to whip up nine courses, paired with Absolut cocktails, for us.

The point of flying in Achatz and his team from Chicago — not that I would have cared if there wasn’t a point — was to demonstrate how the dining experience is all encompassing, literally a feast for the senses.

Achatz is a big believer in getting his diners to employ all their senses when enjoying his food. For example, to evoke summer tomatoes in the middle of winter, he used a plastic pillow filled with the air of freshly cut grass and poked with holes and then put a tomato dish atop it to blow the air out. In our meal, rosemary vapor to complement the lobster dish was created by the server pouring hot water over the rosemary sprigs that surrounded the dish.

In fact the dinner was the perfect example of thinking outside of the box: cocktails were bite-size amuse bouche on pedestals, utensils were edible, ice was flavorful, and the table was one big plate for dessert.

I wish everyone could experience such a meal. But if you’re not going to Chicago any time soon, I wanted to at least share the videos and photos I took to give you a sense of what it was like.

This Weekend: $3 Brown Bag Beer, Mixology Costume Party, Spooky Pub Crawl

Who doesn’t love Halloween? Whether it’s for the chills, costumes or parties, I look forward to it every year. And I’m happy to say there seems to be a decrease in douchy “1st Annual” parties this year and an increase in events I actually want to go to! By the way, catch me on Carson Daly’s radio show “AMP Mornings” this morning for the audio version of this roundup.

2nd Annual Korean Barbecue Cook-off and Soju Mix-Off

LA Korean Barbecue Cook-Off by Caroline on Crack

Plates of fun at Korean Barbecue Cook-Off

Of course you want to go to the Korean American Coalition’s 2nd Annual Korean Barbecue Cook-Off this Saturday, August 7 in Koreatown. Come on, it’ll feature the top KBBQ restaurants in LA, like Park’s BBQ, Soowan Galbi and Ham Ji Park and sexy Chef Ludo and not-so-sexy Jonathan Gold will be among the judges who crown the best LA galbi (marinated bone-in beef ribs), galbi (marinated boned-out beef ribs), pork ribs and bulgogi (marinated sliced sirloin).

And, no, you’re not just going to stand there watching Ludo and JGold lick the barbecue sauce off their fingers. You, too, will get to try out the grilled offerings at $5 a plate (vouchers must be purchased at the event with cash only). Plus there will also be an eating contest (secret ingredient to be announced), a beer garden, and thankfully vendors to cool you down like Scoops ice cream, Coolhaus ice cream truck and Sprinkles Cupcakes.

For cocktail fans, the special bonus is that this year will feature a soju cocktail competition where L.A. bartenders will compete to make the best Koreatown-inspired drink. Hmm, what might those taste like? I’d tell you but the cocktail recipes are kept confidential until the event.

However, I will tell you that the competitors include Fred Warner of La Buca (formerly of The Association), Josh Goldman (formerly of the The Dining Room), Daniel Eun of The Varnish, Joel Black (formerly of Comme Ca) and Jameson Rhyme of Bottega Louie. Who will you root for?

The guy with the best KTown cocktail-making skills will win $300 and a $100 kbbq gift card and their cocktail will be featured at the KBBQ after party at Cafe Bleu for you to enjoy from 8pm to close.

In any case, this is definitely a summer event not to be missed. What could be better than ‘cue on a hot day? Just make sure to pack lots of Wet Naps.

Christy Pope by Caroline on Crack

New Yorker Christy Pope is one of lovely ladies showcased at Red Hot Rover.

Roving bar night Red Rover which had debuted this past March at First & Hope Supper Club will now be popping up on the Westsiide! Hotel Shangri-La in Santa Monica on Monday, July 12 to be exact. Yes, Marcos Tello and Aidan Demarest, aka cocktail consultation firm, Tello/Demarest Liquid Assets, will not only be bringing their mixology to west of the 405 for a change but this night’s lineup will consist of all women bartenders from around the country! No wonder this night has been renamed Red Hot Rover.

Guest tenders include local Naomi Schimek, Christy Pope of New York, Jennifer Contraveos of Chicago and Jessica Tanaka of San Francisco.

The ladies have come up with an 11-cocktail list (each drink is $13) for you to enjoy against the beautiful backdrop of the sun setting over the Pacific Ocean. Lovely.

  • Amer Sucree: Oxley Gin, M&R Sweet Vermouth, elderflower liqueur
  • Angkor Wat: Bacardi Coco, lime, serrano chile and cilantro
  • Bay Rose: Oxley Gin, blackberries, pink peppercorn honey syrup, splash of lemon and egg whites
  • Bonita Applebaum: Bacardi, Landy Cognac, Chartruese and apple butter with cinnamon
  • Gin Et Vertjus: Oxley Gin with Persian sour grapes and honey syrup
  • La Summer: Serrano chile pepper syrup with mescal and Cazadores tequila with mango and pineapple

  • South Central: Muddled cucumber and mint with splash of lime, sugar and Corzo Silver Tequila
  • The Westside: Mint, blueberry syrup, Oxley Gin, egg whites

The La Summer is calling my name. BTW, if you are ambitious enough to try and drink through the whole list, the hotel is offering a special Red Rover rate of $240. Yeah, that’s the discount, but I guess the hotel DOES have a view of the ocean and a cool pool area.

And if you’ve had too much to drink, designated driver service Y Drive LA will be on hand to drive you and your car home for a fee.
