The New Tom Bergin’s Tavern: Shamrocks Saved, Largest Irish Whiskey Collection, Irish Whiskey Only Cocktail Menu

Nobody panic. The Tom Bergin’s shamrocks aren’t going anywhere. Mixologist Marcos Tello assures me that if anything they will only suffer a light dusting. And Marcos would know. He’s the one who has been brought on by Tom Bergin’s Tavern‘s new owners, Warner Ebbink and Executive Chef Brendan Boudet (Little Dom’s, Dominick’s), to do the cocktail menu and Irish whiskey list for the redone Fairfax Avenue bar.

“[The new owners] were very, very interested in keeping all the old folklore, that actual feel of the bar, everything. They literally preserved everything,” Marcos said. “The bar is still the same, they just refinished it. The ceiling and the shamrocks will all be in the same place. They just dusted it off and kind of restored it. They preserved all the historic items but just upgraded things like you want upgraded like the bathrooms, the kitchen, the plumbing. In that aspect, yeah, it’s better.”

With us you’ll have to be a super regular, but when you earn it, we’ll celebrate your shamrocking and present you with a certificate. It will be a big deal.

For fans of the iconic L.A. bar, this is great news indeed. Not to say that change is a bad thing. Consider that the new cocktail menu Marcos is creating will offer about six to 10 Irish whiskey-centric cocktails. And it’s not going to be the hand-crafted masterpieces that the master mixologist is known for at his previous projects 1886 and First & Hope.

“We have a fast program. No-nonsense program but at the same time it’s going to be very thoughtful of how they’re tasting to the customers and turning them on because 1) we want to keep our old customers. We’re going to honor them first. And 2) we want to bring in new people and celebrate Irish whiskey,” he said. Every drink on that list will be a celebration of the Irish spirit; Irish whiskey in a Manhattan, a Daiquiri, a Sour. Yes, they’re not just for picklebacks anymore.

Fortunately Bergin’s will have a slew of Irish whiskies at its disposal, especially since Marcos proclaims that it will be “one of the biggest if not THE biggest Irish whiskey selections in the U.S.” Currently West L.A. bar Bar Food claims to hold this title, what with its special whiskies in stock that you can only get in Ireland. But with Marcos’ connections and his knowhow Bar Food may have to share the honors. But then everybody wins.

Although there will be this new cocktail list, Marcos said that they will retain some of the original staff and they will all be trained on the classics. So, yes, you can get a Martinez or a Negroni if you want one. But sounds like everyone will be flocking to Bergin’s for the Irish whiskey.

Tom Bergin’s Tavern is projected to open mid to late February this year, just in time for St. Patrick’s Day.

Fun fact: Tom Bergin’s actually inspired the show Cheers and its bartender Chris Doyle inspired the Coach character. Marcos wanted to become a bartender because Sam Malone made it look so fun. So it all comes full circle.

Last Night at Spare Room’s Tiki Night: Flaming Cocktail Bowls and Zombies

The last thing I remembered.

Leave it to Mr. Aidan Demarest to go out with a bang. Last night was his grand finale as director of beverages for Hollywood Roosevelt’s Spare Room. And it also happened to be Tiki Night featuring the cocktail stylings of the very talented Marcos Tello (The Varnish) and John Lermayer (The Florida Room, South Beach). Coincidence? I think not.

Naturally, cocktail geeks like Thirsty in LA, EstarLA , LaurenTheClark and Social Domain LA as well as liquor industry folks like bartender Zahra Bates and Plymouth Gin brand ambassador Silamith Weir turned out in full force for the event to wish Aidan good luck in his new venture, Neat bar in Glendale, as well as to marinate in the tiki concoctions of the evening.

Many, many bowls of Marcos’ flaming Kraken-Toa Bowls made the rounds in the room causing innocent by-standers to duck the cocktail’s long spear-like straws. A favorite of the evening was John’s One of the Hammock, a very light, frothy cocktail which was a welcome respite from the heavier, sugary tiki drinks. To me it came across as a mint frappe…even though it didn’t have mint in it but coconut rum, Domain de Canton, absinthe, pineapple leaves and sage leaves.

In any case, last night was a blast. Here’s to many more parties at the Spare Room under the new leadership of new Director of Beverages Naomi Schimek!

Spare Room’s A Night of Tiki + Cocktail Recipes

It’s October and you may be relishing the first chill in the air, the L.A. StormWatch of the season and pumpkin flavor popping up on menus everywhere but The Spare Room at Hollywood Roosevelt will be celebrating sultry tropical islands and their delicious tropical cocktails tonight at its special Night of Tiki event, brought to you by Kraken Rum.

This night also happens to be SR’s Director of Beverages Aidan Demarest’s last night before he kicks off things at his new Glendale bar, Neat and Naomi Schimek takes over. By the way, Naomi has lots of exciting things planned for the Spare Room.  Someone say, “cocktail lessons”?

But tonight’s Tiki event will also bring in Aidan’s Liquid Assets cocktail consultant partner Marcos Tello and John Lermayer of The Florida Room in Miami’s South Beach.

J Gold’s Pancake Breakfast
I had to ask LA Weekly‘s food writer JGold when I saw him at the craft beer bar crawl, “Now you’re doing a pancake breakfast event? Why?” He seemed really excited about it saying it was his idea and that they won’t just have sweet but savory breakfast items, too, as well as, wait for it, brunch cocktails! OK, that sounds good. Plus for $25 you get to sample from 20 of the man’s favorite pancake places like BLD, Original Pancake House, Fig and Playa. Part of the proceeds will benefit the LA Food Bank. Creaky Tiki at 320 Main
For this month’s tiki event at Seal Beach’s 320 Main, the bar will explore pre-tiki tropical cocktails like the Singapore Sling, Hurricane and Queens Park Swizzle, to name a few. Guest bartender Marcos Tello will serve up the cocktails along with owner Jason Schiffer and RumDood Matt Robold. Cocktails are $8 each and punch bowls are $6 a glass.

Vote Now: Who’s the Best Bartender in All of LA?

Which LA bartender do you think is the Bee's Knees?

Mark this down on your social calendar, cocktail fans: On October 9, the L.A. cocktail community will be celebrating Table 20′s 2nd Annual L.A.’s Best Bartender as nominated by you and ultimately voted on by an esteemed panel of judges the night of the event.

At Downtown’s Elevate Lounge, guests will be treated to boozy sno cones by Ice, Ice Shavie and a pop-up of everyone’s favorite cocktail paraphernalia shop, Bar Keeper. Plus rumor has it that the Beer Chicks, Christina Perozzi and Hallie Beaune, may be in attendance, curating a tasting table of tasty craft beer.

While you’re shopping and imbibing, judges Library Bar’s Matthew Biancaniello (last year’s winner), King Cocktail Dale Degroff, LA Times writer Jessica Gelt, local celebrity Bricia Lopez (Guelaguetza), USBG LA president/The Varnish bartender Marcos Tello and head judge Johnny Iuzzini of Top Chef Just Desserts will vote for the best Karlsson’s Gold Vodka cocktail (created by the finalist bartenders) and in turn the best bartender in L.A.

But this party can’t go down without you fine folks. From now through September 19, submit your nominations for which drink slinger you think is the best in our city. Take into account their drink knowledge, cocktail-making skills, speed, personality, smile, etc…whatever makes them awesome to you, and submit their name, name of their bar, photo (cell phone photos work) and why they deserve their face plastered on an L.A. billboard announcing them as the best bartender in Los Angeles here. You get to nominate up to three bartenders and may win a prize of a $200 gift certificate to Takami Sushi & Robata Restaurant just for nominating.

The nominated bartenders will be culled down to 24 semi-finalists and the judges will then narrow them down to four finalists. One finalist will be whoever wins the most nominations and the People’s Choice award. And at the party, the 2nd Annual L.A’s Best Bartender will be crowned. Tickets for the event aren’t on sale yet but stay tune.

New Summer Cocktail Menu at 1886
Nothing says summer like tropical drinks and Marcos Tello and the 1886 crew know it. Their new 16-drink summer cocktail menu debuts this week and features tiki favorites like the Zombie, QB Cooler and Pina Colada as well as twists on classics like  Cherry Daiquri and Pisco Punch. But I can’t wait to try the Media Park Swizzle with Bols Genever, sherry, ginger, Falernum syrup and lime. And the Vintage Caprice, a cocktail aged in a bourbon cask, sounds like a must-have.

1st Annual Unique LA Summer Show
Finally one of the funnest shopping events in town comes to the Westside! Browse the wares of 250 local designers, enjoy free Hendrick’s cocktails (woot!) and Bear Flag wine and do some free crafting at the DIY Craft Corner. For sustenance, take your pick of popular food trucks like the Grilled Cheese Truck, Great Balls on Tires and Glow Fish Truck.

Sunday Afternoon Pig Roast & Farmers Market at Craft Los Angeles
In honor of the Santa Monica Farmers Market’s 30th anniversary, Craft Los Angeles is throwing a Pig Roast, Beer and  Bluegrass event featuring whole roast pigs, family style sides and desserts by chef John Keenan and pastry chef Shannon Swindle as well as local beer and wine. Live bluegrass music and an auction will keep things festive and a BBQ sauce competition.

Monday Night Movies, Martinis and Manicures at Station Hollywood: Ferris Bueller’s Day Off
Who didn’t  want to be Ferris? Having the best sick day in history and getting away with it. Well, celebrate everyone’s favorite juvenile delinquent with small plates, cocktails and free Bliss Spa manis while screening the John Hughes classic. Station Hollywood’s new weekly movie night takes place on its outdoor lounge with fire pits and a 35-foot-high movie screen. Next weekend the movie will be Reservoir Dogs, which also happens to be “Bourbon Night.” No ressies required.
