Maker’s Mark Bourbon-Paired Dinner: Making Peace With Red Medicine and Whiskey

Earlier this week, I was invited to a lavish hosted bourbon-paired dinner by Maker’s Mark at modern Vietnamese restaurant Red Medicine in Beverly Hills. Two reasons why I couldn’t turn this down even after my self-imposed whiskey hiatus (following an over-indulgent night with Elijah Craig) and that scandal last year involving the ousting and outing of a noted restaurant reviewer which turned me off the restaurant: 1) It’s Maker’s Mark, one of my favorite bourbons, and 2) it’s a bourbon-paired dinner with something other than the usual steak and potatoes or barbecue.

And for this event chef/partner Jordan Kahn and that scandalous managing partner Noah Ellis specially created four cocktails they felt were in the spirit of Maker’s, which they then paired with a number of dishes. They used both the regular Maker’s as well as Maker’s 46, the company’s newest whiskey.  How could I turn all that down?

The first four courses were nibbles of pork rillette, delicious brussel sprouts in fish sauce, beef tartare and tomatoes so the first cocktail was light and effervescent. Noah and Jordan decided to go with a wintry, bourbon-y version of a Moscow Mule with pomegranate being the focus. The cocktail is made with Maker’s, housemade ginger beer, housemade grenadine (pomegranate juice and vanilla), lime juice and Angostura orange bitters.

“When we do drinks like this, we’ll carbonate everything together,” Noah said. “Because if you just take the bourbon and mix it with your ginger beer, sort of half of your drink would be flat and half would be carbonated. So we’ll take everything, we’ll let it sit for a few hours so the flavors can really mingle and then we’ll carbonate everything at 40 psi so the whole drink is a little more sparkling. And to cut it from there we’ll do it with crushed ice and pomegranate.” The result is the sparkliest cocktail I’ve ever had, almost like a cocktail soda. Brilliant.

A quick look at their online cocktail menu showed that they do indeed have a carbonated cocktail available (at least if the menu is up-to-date). The #58 (they don’t seem to bother with cocktail names here), which is described as an Argentinian Americano, is made with Jelinek Fernet, Cocchi Vermouth di Torino, Bulleit Rye, Mexican Coke and all carbonated together. I’m going to have to give that a try.

The next round of four dishes was heartier and more savory what with the likes of Imperial Wagyu beef brisket and heirloom rice porridge with onion soubise, young carrots, salted black bean and elderflower. So the duo did a take on the Mint Julep but with a tropical twist. Noah said he thinks tropical fruit when he thinks winter. So for their cocktail they used pineapple syrup instead of just regular sugar and brightened it up by muddling a grapefruit peel into each drink and then mixed in Maker’s Mark and Fee Brothers whiskey barrel-aged bitters for spiciness.

Surprisingly, the cocktail is easy to make at home, according to Noah, but the only tricky part may be the pineapple syrup. “But it’s not even that hard. We make ours sous vide so we take 2-to-1 pineapple pieces to sugar by weight and cryovac them and put them at 125 for 18 hours. But before I figured that out I was just doing it in a pot with water, pineapple and sugar and it totally works. The reason ours is kind of neat is that there’s no added water from the syrup. The only liquid is the sugar extracts from the pineapple. But if you do it with water, just use a little more, it’s not the end of the world. It’s a breeze at home.”

The sweetness of the cocktail did work well with the food, especially that oh-so-tender brisket that was braised with Maker’s. My only complaint is that I was expected to stretch this drink over four dishes. The crushed ice in it watered it down so it felt like a race against time to try to enjoy it before it got too diluted. I know, world’s smallest violin.

The last two dessert courses each came with their own cocktail. For the Coconut Bavarois with coffee, coconut milk, Thai basil, peanut and chicory, Noah paired a coconut eggnog made with Maker’s 46. “When I smelled the coconut dessert, I thought ‘the coconut and Maker’s 46 need to go together.’… So we take coconut milk and we cook it sous vide with eggs and sugar and cinnamon, clove, allspice and nutmeg and we make a custard. So it’s just coconut and egg and then we cut it with the Maker’s 46. Chilled it overnight to marry the flavors and then we froth it up with a handblender so it’ll be light.

“It might be a little bit of overkill with the coconut dessert but it was cold last night so the recipes that we grabbed were sort of these warm winter/fall…and the Maker’s 46 with the toasted French oak staves really calls for these flavors in particular,” said Noah. The result was a very light and not-too-rich eggnog, which I loved. Made me think of spending Christmas in Hawaii. And the cocktail wasn’t overkill with the coconut dessert, which was my favorite of the two by the way, but they just kind of blended together instead of actually complementing each other.

For the last cocktail and dessert pairing, they did a bourbon version of everyone’s favorite winter cocktail, hot buttered rum with a dessert of bitter chocolate, kecap manis, oats, parsnip, brown butter and soy milk sorbet. Naturally here the Hot Buttered Bourbon was gourmet-ed out with butter from the south of France and garnished with sea salt from England in addition to mixing in Maker’s 46, hot water, nutmeg and sugar. As it cooled, it became richer and butterscotchy. Very decadent.

Fortunately, even though these cocktails were made especially for this dinner, Noah said they’re looking to add the Hot Buttered Bourbon to the cocktail menu in the next month. Perfect for those 50-degree nights! Heh.

So I think I made my peace with Red Medicine (and whiskey). I may not go there for dinner (too lah-dee-dah for my cheapskate tastes) but I’d love to make a habit of stopping by for a late night cocktail and bar snack. They’re open til 2am and have a great bar area. In this sleepy part of Wilshire Boulevard, it seems like a well-known hidden gem.

On a side note, after this dinner I went home and fixed myself a Maker’s Manhattan. I’m cured!

Launch of Bigfoot Lodge West’s New 80-Whiskey List

Bigfoot Lodge West never tasted so good.

This Saturday, Bigfoot Lodge West in Culver City/Palms is launching a brand-new cocktail menu and whiskey list. “But didn’t they just open? What’s with a new list already?” you may ask, and yes they opened just over a year ago. But this new whiskey list boasts to have “the biggest small batch bourbon selection and arguably the best whiskey selection on the Westside.” That’s big talk, right?

Turns out that the former spirits director of bourbon bar Thirsty Crow (1933 Group’s bar in Silver Lake) and “Bourbon Baron,” Brandon Ristaino, relocated to the West for the Lodge’s liquid makeover. He handpicked 80 whiskies, so now instead of just a couple of ryes to choose from for a Manhattan, there are 10 – Papy Van Winkle 13-Year, Rittenhouse 25-Year and Sazerac to name a few. Yesh! To show how serious they are about the brown spirit, they even brought over the ice ball-pressing machine like the one they’ve been using at Thirsty Crow to cool your whiskey without watering it down too much.

And now their Whiskey Lovers Night every Monday will be even more of a draw for whiskey lovers as well as whisky lovers. That’s $4 Buffalo Trace Bourbon, $5 rye specials and a rotating whisk(e)y flight list.

Thankfully, the Bourbon Baron also redid the cocktail menu. Sure, the Toasted Marshmallow cocktail is still there if you want it but now to match this more grown-up Bigfoot Lodge, there are about 19 cocktails ($10-$12), including five “for whiskey lovers” and some champagne cocktails. The Thirsty Crow’s house cocktail even makes an appearance. For a recipe of one of their signature cocktails, hit the jump.

I’m just happy that they have classics, too, like The Aviation, Side Car, Old Fashioned and Sazerac!

So when does this new-fangled menu launch? This Saturday at 9pm. Since this is going to be a big move day for me and my new place is within stumbling distance, you bet your sweet fanny that I’m going to be there. Hope to see you!

Mmm, so good on so many levels — Buffalo Trace bourbon, cocktails made with BT, cocktails made with BT for only $4 each! Yup, another great event at Checkers Downtown. This one features BT in cocktails like the New Orleans Sazerac and Blackberry Julep, as well as an interesting-sounding Bufala Negra which is made with muddled basil and aged balsamic vinegar! Food plates are only $4 as well and include Prince Edward Island black mussels and a fig and bacon salad.

Tequila Appreciation Night at Malo Restaurant
Pick up some tequila tasting tips and enjoy a variety of tequila cocktails all while giving back to the Latino art community. A win win for everyone, I say! At the Tequila Appreciation Night, hosted by Mexico’s only female owned and operated distillery, Sino Tequila, guests get to chat with the Sino’s owner and for every bottle purchased, $1 goes to Latino Arts Network.

Q&A With Bobby Green, Co-Owner of The Thirsty Crow

Last week Silver Lake’s newest bourbon bar, The Thirsty Crow, opened its doors to a neighborhood eager to say good-bye to former occupant, Stinkers Truck Stop. Now, in the place of steaming skunk butts there are antique wall sconces, beer cans are cleared away for a bourbon barrel and the trucker-themed cocktails like the Diesel Martini and the Large Marge have been replaced with the classic Sazerac, Old Fashioned and even a variety of Manhattans. I had a chance to chat with 1933 Group co-owner, Bobby Green, about why Stinkers had to end, how a land-speed record inspired this bourbon bar, and which drink on the new cocktail menu he’s most excited about.

Caroline on Crack: Why a bourbon bar?
Bobby Green: I’ve become a huge fan of bourbon ever since Bigfoot West [a 1933 Group bar] opened. But before that I was a fan of Old Crow whiskey. It’s been around since the 1800s. I build and race racecars as a hobby. I do land speed racing. My car is named the Old Crow after the whiskey. It’s like a torpedo with wheels.

We race at the Bonneville Salt Flats once or twice a year. For the past three years we’ve gotten a land speed record. So every time we get a land speed record we have a bottle of Old Crow whiskey. So we get a record, then we open a bottle and then everyone in the pits gets a shot. And everyone that comes by the pits gets a shot. So once the bottle is empty we fill it with salt from the salt flats and then we write the date and the record and it goes on the shelf. So that’s been a tradition for years so I’ve always wanted to kinda incorporate that with opening a bar. I already planned to open the Old Crow bar. Well, it turns out you can’t name a bar after alcohol. You couldn’t open the Jack Daniels bar or the Absolut bar. So we named the bar the Thirsty Crow because it’s one of Aesop’s Fables.

CoC: What made you decide to end Stinkers?
BG: Stinkers drew too much of a bridge-and-tunnel crowd. People from Long Beach were driving to Stinkers to check it out. And we’re more of a neighborhoodie kind of thing. But it was still a little too wacky for [the locals] and they were constantly asking for better stuff, better beer and whiskey. The local crowd was coming anyway but they were like, “You should get this or you should get that.” So we just decided the crowd around Silver Lake was maturing so much more than what we could give at Stinkers. That was our goal anyway, we want to give a neighborhood what it lacks. We can tell from the four nights of soft opening people are just flocking and they’re happy.

Delphine Opens Up Its Patio for Weekend Brunch Debut
I may not like the cocktails or desserts of Delphine but the debut of their brand-new weekend brunch on their new outdoor patio is pretty enticing. And hmm to their brasserie-inspired menu of Croque Monsieur ($12) and scrambled eggs in a puff pastry with asparagus and wild mushrooms ($15). For beverages there’s fresh squeezed OJ, espresso and, bien sur, brunch cocktails like Bellinis and Champagne St. Germain ($8 each). Maybe I’ll have a better experience with their brunch?

Morton’s The Steakhouse Los Angeles Hosts Maker’s Mark Bourbon Tasting
Ohhh, one of my fave bourbons, Maker’s Mark is having a tasting at Morton’s The Steakhouse Los Angeles. Four courses and each one is paired with Maker’s. First course is scallops with a Manhattan and fourth is a hot chocolate cake paired with a Mint Julep. There’s also a comparison tasting between Maker’s, Crown Royal and Jack Daniels.

New Belgium Brewing Beer Pairing Dinner at Hudson House
Another tasty dinner, this one pairs gourmet pub food with New Belgium Brewing beers. Starter bites of garlic toasted crostinis and grilled portabello in puff pastry with Mothership Wit Organic Wheat Beer. The main course of Fat Tire Amber Ale-braised lamb with 1554 Enlightened Black Ale sounds YUM. Downtown wine bar celebrates its one-year anniversary with a special Founder’s Flight ($18) — a selection of five wines that helped inspire the owner to create Corkbar. Royal/T’s Alice in Wonderland High Tea
Seems L.A. is going mad as a hatter for Tim Burton’s Alice in Wonderland as evidence by all the high tea events. But Royal/T’s is sure to stand out, not only for its Japanese cosplay servers but the $25 high tea of playing cards tea sandwiches, a vanilla “Eat Me” cupcake, kobe beef slider, a cup of “Drink Me” Royal/T Green Milk Tea blend, blue mushroom-shaped meringues and Cheshire Cat macaroons with Earl Grey tea filling (both by BakeLab). Provence Wine Council Tasting Event
Explore the wines from the Provence Region of France at this delicious wine event which is held in conjunction with the Provence Wine Council, a gathering of the largest selection of winemakers from Provence ever assembled on the West Coast. Celebrate L.A.’s new talent at LACMA’s Young Directors Night. Six short films will be screened and there will be a panel discussion with the directors afterward. But, definitely stay for the after-party across the street at A+D Museum where you can peruse the galleries and video installations and partake of the open bar featuring Maker’s Mark and Malibu Family Wines as well as Sprinkles Cupcakes! If you want to go to the OK Go release party on Friday, you can purchase tickets to that event plus this one for only $40 and save $10.

Beefsteak Sundays at Bacaro LA
Apparently these Beefsteak Sundays are uber popular and there are only 32 seats so chances are it’s already booked up but give it a shot. Sorry! I just found out about this yesterday. If you are SOL, just make your ressies for next month’s event where it’s all-you-can-consume-beer/wine-and steak for only $25! There are two seatings, 5:30pm and 8pm, every first Sunday of the month.

Rustic Canyon’s Spring Beer Bash Dinner with the Beer Chick
But I will give you the heads-up to this tasty event on March 23 at the Santa Monica restaurant where, for $75, you get to enjoy five courses of fresh spring fare paired with five beers provided by Beer Chick, Christina Perozzi and featuring local breweries, The Bruery, Craftsman and Skyscraper Brewing Co.

Stopped by the Bigfoot Lodge West for my friend Shelley’s celebratory cocktail hour. We’re celebrating her getting into UCLA med school. She had confused this Bigfoot with the Atwater one which has a happy hour. This one doesn’t but fortunately on Monday nights it IS whiskey lover night. Meaning we have our choice of a $4 Buffalo Trace Bourbon, $5 Sazerac Rye or $6 cocktail made with either of those. Awesomeness!

My roommate Kristina ordered a ginger and Buffalo and found out that it was mostly the latter with only the teeniest hint of the former. Yes, our bartender Esther is awesome. My Buffalo Manhattan was equally potent.

And the best part? You can order food to be delivered here. Just ask for the big binder of menus. I ordered some green curry with mixed veggies from Thai Boom down the street to fortify my stomach for the mean Manhattan.

Apparently this awesome deal is every Monday night and there is also a whiskey tasting later at 10pm.
