DeKuyper Be Gone: A New Cocktail Program at Nick & Stef’s Steakhouse

I’ve got two bits of good news for you cocktail fans: 1) The very adorable Joseph Brooke, the director of beverages for the Edison, has joined molto bello Vincenzo Marianella of Copa d’Oro in his cocktail consultation business, MyMixology, making them possibly the sexiest cocktailing duo in L.A. And 2) Joe and Vincenzo have revamped the cocktail program at downtown’s Nick & Stef’s Steakhouse!

That’s right. This wine-intensive Patina Group restaurant didn’t really give too much thought to its cocktail list before, equipping it with date-friendly girly drinks like the Banana Popsicle (egad!) and other Dekuyper-heavy cocktails to keep the arm candy of businessmen happy. So Vincenzo created a much-needed cocktail list of classic drinks and fresh ingredients and Joseph has helped put it in place at the downtown bar/restaurant as well as corrected some of Vincenzo’s English on the list.

The two didn’t simply give the bartenders there a list of color-by-number recipes and leave them to their own devices. “We’re teaching them the format, the method of creating their own cocktails,” Joe said. “We’re sort of screwing ourselves out of more business but ultimately we want the bartenders to start taking ownership of the program so they start maybe making their own cocktails and it’s good enough so maybe in the next menu they’ll put in one of their own. And that’s our goal with this place.”

The duo also did an extreme makeover of the bar’s shelves getting rid of the sticky, dusty bottles of Dekuyper, upgrading the well booze and introducing quality mixers like Aperol and Brizard. “That whole third row up there was all Dekuyper and probably has never been touched for god knows how long,” Joe lets on. “So we were more focused on changing up the liqueur because that provides much more flexibility when making a cocktail.”

The brand-new cocktail menu, which is comprised of about 14 drinks ranging in price from $11 classic cocktails to the $16 Smoke of Scotland (a Vincenzo signature cocktail),  has already been in effect for about three weeks and has attracted more clientele and intrepid drinkers as well as offered the regular customers ways to develop their palates. Numbers are up and the outdoor patio has been a-buzzing with 9-to-5ers eager to soak up the summer sun while enjoying some tasty, refreshing drinks.

For now the menu is only for the bar area but eventually the guys hope that the servers will get involved in the new program where they can recommend cocktails for dinner. “It would be tricky because obviously you would make more money selling wine but it’s just so much more an in-depth experience to start off with cocktails,” Joe said.

MyMixology is also hoping to eventually offer a different take on the Bartender’s Choice at Nick & Stef’s where patrons can choose between the Nick’s Choice, an aromatic cocktail, and Stef’s Choice, a sour.

Unfortunately the bar/restaurant doesn’t have late hours, not really conducive to bar hopping, and is subject to the downtown flow of things but if you swing by before 8pm you’ll make it before the place turns into a ghost town.

But just in time for the warmer days of summer, the restaurant will be doing BBQ on the patio every Thursday night starting tomorrow July 1. They’ll be serving up burgers and bites right off the grill from 4:30 to 9pm. Work that in with the weekday happy hour from 3pm to close where you can get MyMixology’s delicious classic cocktails like the Kentucky Buck with Old Crow Bourbon, ginger and lemon juice and Tommy’s Margarita for $5 and you’ve got yourself a fun weekday party.

And Now for Something Completely Different: Manila Machine Filipino Food Truck

I finally had my first Manila Machine Filipino food truck experience last week after what seemed like weeks of near misses. Nastassia Johnson, co-founder of L.A.’s first Filipino food truck and the talented baker/blogger of Let Me Eat Cake, did give me a taste of the fare via her ube cupcakes that she sold at the Eat My Blog bake sale, but I wanted MORE! Fortunately the cupcakes (recipe here) are also sold at the truck. But unfortunately, they tend to sell out pretty quickly.

First thing’s first, full disclosure: I’m Filipino so I have a soft spot for the Manila Machine. I love that Nastassia and her food truck partner, Marvin Gapultos of blog Burnt Lumpia, are opening up Angelenos’ eyes and palates to Filipino food — a cuisine influenced by Spanish, Chinese and other cultures. As it is our cuisine hasn’t really been accepted in mainstream America. But now hopefully everyone else will discover the joys of chicken adobo — chicken marinated in soy, garlic and vinegar.

So when Nastassia tweeted that the truck would be at T Lofts in West L.A. near my day job, I jumped on my Vespa and scooted on over. I timed it just right by showing up an hour before they were scheduled to leave because there were zero lines by then. Compared to when the truck first opened its windows to the awaiting masses.

Nastassia was manning the pickup window while her boyfriend was taking the orders. Her regular chef had flaked out for the day so it was a family affair with her brother and Marvin doing the cooking.

As much as I was curious to taste the chicken adobo dish I instead got the Original Manila Dip — two sliders on pan de sal and served with adobo dipping sauce. One slider was shredded chicken adobo with caramelized onions and the other beef marinated in sweet calmansi. For good measure, I also ordered up a couple of lumpia (pork egg rolls) and the turon (banana lumpia). All that for $10. Everything is in these affordable portions so you can mix and match.

Fancy sliders, what with the use of pan de sal bread; “salt” rolls that may remind folks of sweet Hawaiian bread. This definitely isn’t my mama’s Filipino food. The meat of the chicken adobo and the beef were tender and, like the lumpia, weren’t as greasy as my mom’s; sorry, Mom.

And I’ve never had turon like this before. The original version calls for the banana lumpia to be rolled in brown sugar and fried. Here, it’s drizzled with caramel sauce. So decadent, sweet and sticky. Keep some Wet Naps handy.

But the piece de resistance has to be Nastassia’s ube cupcakes with the coconut frosting. Moist, flavorful cake which pairs so perfectly with the coconut frosting. I can’t have just one.

If I had to complain about something, though, it would be that the food is not really packaged to-go and you need two hands and lots of napkins to eat them, especially that sticky turon. There is a nice shelf on the truck where I just set my containers but what to do if there are lots of people gathered around the order and pickup windows? Also it would be difficult to balance all those containers to take back to my desk should the Manila Machine park at food truck alley near my office in Santa Monica, ahem. Minor issues for sure, but just sayin’.

The menu changes regularly so check with the MM’s site to see what they’re serving up at the truck this week. Mm, spam sliders! I wonder when they’ll have lechon, specifically lechon kawali. The truck also has breakfast with dishes like a pan de sal French toast and spam with garlic fried rice and a fried egg and weekly specials should you be lucky enough to catch them during morning hours.

In any case, great job, Nastassia and Marvin! And thanks for spreading the gospel of Filipino food.

Cocktail Paired Dinners: Malo’s Tequila Appreciation and Wilshire’s Whiskey Social

Can I tell you just how much I love, love, LOVE that there are more and more spirits/cocktail pairing dinners out there? Forget wine and beer, it’s all about the cocktail pairings! You can actually customize a cocktail to complement a dish instead of the other and usual way of pairing a dish with a beer or wine.

And, lucky you, there are actually two such dinners going on this week that you won’t want to miss: Malo’s Tequila Appreciation Night and Wilshire’s Whiskey Tasting Dinner! Unfortunately they’re for the same night (and for me the same night as the Drago Centro cocktail competition) so take your pick.

Malo’s Tequila Appreciation Night

Tequila lovers will enjoy this unique dinner which pairs three courses with Herradura Antiquo cocktails at this popular Mexican cantina in Silver Lake.

Dinner menu:

  • Salsa Flights paired with Herradura Antiquo Blanco Margaritas and Impala SS Low Riders (Herradura Antiquo Reposado, Lime Juice, and a Mason Prunier Liqueur d’Orange Foam)
  • Taco and Tequila Flights — Ceviche, Al Pastor, and Asada Tacos — paired with one expression of each of Herradura Antiquo
  • Shrimp Diablo with Black Beans and Corn on the Cobb paired with the Rosita (Herradura Antiquo Reposado, Carpano Antica & Orange Bitters)
  • Fried Bananas paired with Anejo Cherry Mint Julep (Herradura Antiquo Anejo, Amerena Cherries, Luxardo Cherry Liqueur, and a splash of soda)

And for there is also a vegetarian pairing menu available upon request.

Wilshire’s Whiskey Tasting Dinner and Whiskey Social

This four-course dinner pairs dishes with whiskey cocktails made from the Heaven Hill Distilleries American Whiskey Collection and ends the night with a tasting of Parker’s Heritage Collection 27 Year Small Batch Bourbon.

Dinner menu:

  • Rye Whiskied Heirloom Tomato Salad with Jalapeño and Cucumber paired with Elijah 12 Year Cucumber Jalapeño Old Fashioned
  • Maple Glazed Duck Breast with Farro and Wheat Whiskey Soaked Cherries paired with Pikesville Rye Allspice Manhattan
  • Bourbon Braised Beef Cheek with “Creamed Summer Corn” paired with Bernheim Whiskey Summer with Evan Williams Honey Reserve
  • Bourbon Sweet Potato and Pecan Pie with Vanilla Bourbon Crème Fraiche paired with Evan Williams Single Barrel Sweet Potato and Walnut Cocktail

The dinner with the pairings is only $50. A bargain considering the gourmet dishes and high-quality whiskies involved. There are only a few spots left so make your ressies asap!

If you can’t make it to dinner at 10pm, the Whiskey Patio Bar will offer specialty whiskey cocktails at $8 each along with free whiskey-infused small bites.

For the past month, Drago Centro has been on the hunt for a new cocktail to add to its upcoming summer menu, conducting a “People’s Cocktail” contest that invited amateur mixologists in L.A. to create recipes around a secret ingredient and submit their winningest undiscovered concoctions. And this Wednesday the 30th at Drago Centro downtown, the four winners from the four-week contest will create and submit their cocktails to some very discerning judges: me, Shauna of The Minty, Lesley of Tasting Table and more!

The finalists:

  • Chuck Taggart’s Bell’aspetto: Woodford bourbon, Amaro Ramazzoti, cinnamon syrup, blueberries (secret ingredient)
  • Ron Diggity’s Tramontana: Aquavit, Fernet Branca (secret ingredient), Cointreau, Angostura
  • Matt Robold/Rumdood’s Dutch Elm Disease: Genever (gin is secret ingredient), Scotch, bitters, simple syrup
  • Jeni Afuso/Oishii Eats’ Momo Rye Fizz: Rye,  peach, lemon juice (secret ingredient), club soda

While we ruminate over our very tough decision, the public is invited to enjoy drinks from the debuting summer cocktail menu for a special, one-night only price of $8 each.

The Edison’s 35-Cent Cocktail and the $1 Centennial Cocktail Return
They went away for a bit but are now back after the Edison won LA’s Downtown News award for Best Happy Hour! Every Wednesday and Thursday from 5 to 7pm, you can score the 35-cent cocktail and every Wednesday through Friday the $1 cocktail (1 per customer). The Edison happy hour is gonna make you do math by giving you 40% off house cocktails, well and select beer and wine by the glass. At least they have nosh like vegetable panini and chicken wings for a straight-up $5. BTW, don’t forget to tip your bartender. Just because the drink is cheap doesn’t mean you should be.

OK, who doesn’t know all the words to “You’re the One That I Want”? Man, I LOVE this movie. John Travolta was so hot and Olivia Newton-John was rockin’ her extreme makeover. Grab your friends, a bottle of wine and a picnic basket and sing your heart out at this fun Bowl-tastic sing-a-long. Frenchy will be hosting the evening! BTW, I’ve always wanted pink hair thanks to her.

Buy Your Tickets to LA Street Food Fest Summer Tasting Event
Only one month away! The trucks have been replaced by booths, hopefully easing the lines situation. In addition to all the yummy street food and food truck fixins — Coolhaus, Manila Machine, Grilled Cheese Truck, World Fare — there will be two Singha beer gardens plus specialty cocktails created by LA’s own mixologists. Bring a picnic basket and a blanket and stake out a spot on the grass in the Rose Bowl. Live performances by The Deadly Syndrome and Warpaint.

Foodie Fitness’ Urban Hike in Orange County
Join me and Foodie Fitness, aka H.C. of LA/OC Foodventures, for a trek through the OC. Actually H.C. will be walking the entire length of Beach Boulevard from La Habra to Huntington Beach (21 miles!). I’ll just join him for the last 6-10 miles before he reaches the final destination: Don the Beachcomber for a prix fixe menu with tiki drink flight! Michael Jackson’s Greatest Bites at Akasha

This Friday, June 29 marks the one-year anniversary of pop star Michael Jackson’s death. To celebrate his life, Akasha Richmond and Mani Niall, the founder of Mani’s Bakery and executive chef of Just Desserts in San Francisco, will be serving up MJ’s favorite dishes at Akasha in Culver City.

How would they know what the man liked to eat? Both served as his personal chefs for his Victory, Bad and History world tours. MJ first came across the chefs when they worked at Golden Temple, a once popular vegetarian restaurant, in L.A. back during the Thriller days and liked what they were doing so much that he hired them.

“Cooking for Michael was one of the greatest times of my life,” says Akasha, “and since Mani and I wanted to be together on the anniversary of his passing, we felt there was no better way to remember him than to cook up some of his favorite dishes.”

Even though MJ was known for being a fan of comfort food and KFC he was also a healthy eater, staying away from red meat and preferring organic vegetables and Mexican food, and that’s reflected in the menu.

In addition to featuring his favorite bites from 5:30pm to close, in addition to the usual Akasha menu, the restaurant will play Michael Jackson’s greatest hits all night long.

  • Golden Temple Wild Mushroom and Tofu Salad ($12) with Napa cabbage, carrots, snow peas, toasted cashews, ginger-miso dressing
  • Spicy Cajun Shrimp ($12) with skillet cornbread toast

Brown Bag Woodshop: Blind Tasting 24 Craft Beers + Brunch

Mmm, beeeer.

The true measure of a hard-core beer lover? They call 24 tastes of beer in the morning brunch. And at the Woodshop 5.1 Ultimate Brown Bag Tasting and Brunch at Blue Palms Brewhouse this Saturday that’s what you’ll get the chance to do.

This rare beer tasting, which is normally a private open invite beer sharing event, will take beer fans through 24 tasting portions of the premium craft beer taps at the brewhouse at 11:30am — yup, before noon. The kitchen then opens up at noon to serve up food to complement the brew. And just to keep you on your toes, every tap will be covered up with a brown bag so you get the chance to make up your own minds about what you’re tasting instead of just letting the label sway you.

The Woodshop, brought to you by Brian Lenzo and Chris Quiroga of the Blue Palms Brewhouse and David Watrous of Tony’s Darts Away in Burbank, will also include a large bottle-share portion of the event where attendees are invited to bring bottles from their own cellars to share with peeps. Fun!

Broken up into two parts, you can pay $40 for the general admission and participate in the blind beer tasting starting at 11:30am or you can fork over $55 and get brunch as well as bonus beers and a festival sneaky peek at 9:30am.

Mid-afternoon the taps will then be unveiled but the party will continue on till the restaurant opens up for regular business at 5pm.
